A Quick Stop at Kroger… and a plea for help!

With hubby and kids waiting in the car, I dashed in and grabbed some great deals!

4 Healthy Choice Paninis (these are great lunches to take to work, and yummy too!)

1 Tyson’s all natural boneless skinless chicken breast (manager’s special)

I had 2 $1 coupons for the Healthy Choice from the in-store blinkie machine.

Ok, readers. I need your help. I recently started eating chicken after 17 years without it.

What on earth do I do with this Chicken breast? Please don’t laugh, I just get freaked out by the slimy part. I need to wow my hubby with a great dinner tomorrow. Help!

    Hey I put my chicken breasts frozen in a crock pot on high for about 3 hours with salt/pepper & diced tomatoes-from a can, after that I add 1 can rof ranch style beans, grated cheese & instant rice for about 10 mins. Then serve.

    I also do something similar with chicken, cream of mushroom soup & chesse, than cook noodles in a separate pot & serve it over those.

    I like cheese-stuffed chicken breasts (Better Homes and Gardens has a good recipe) or grilled chicken breasts.

    I just tried a new recipe that was so yummy and quite easy. We named it Basil Chicken Pasta. Start by putting chicken on the grill (a gorge foreman will work) and season with garlic powder and season salt. Cook pasta (calls for angel hair pasta, but any will work) in chicken broth and throw in chopped carrots and broccoli to cook with the pasta. Cook until the vegetables are tender. Remove from heat and thicken with cornstarch. Mix in 1 teaspoon of basil. Serve with grilled chicken on top.

    Alyssa – last week I had a crock pot chicken BBQ that I made that was awesome! I also have a good recipe for Bourbon chicken that I’ve posted in one of my menu plans. Both are really yummy!!

    There’s also another good one for chicken cordon bleu that is amazing, but it takes swiss cheese and canadian bacon. You just cut the chicken in half making a pouch. Put a slice of swiss and a piece of canadian bacon in the pouch. Cover lightly with flour and salt/pepper. Oven grill/bake over medium until it’s done. It is the best!!

    I do not cook…much! So here is the easiest chicken recipe I know, to give you a good start!

    Cheesy Chicken & Rice Casserole –
    1 can cream of chicken soup
    1 1/3 cup water
    3/4 cup uncooked long-grain white
    rice
    2 cups frozen veggies
    1/2 tsp. onion powder
    4 skinless boneless chicken
    breast halves
    1/2 cup shredded chedder cheese

    1.Stir the soup, water, rice, veggies and onion powder in a baking dish.
    2.Top with chicken. Season chicken as desired. Cover.
    3.Bake at 375^ for 45min. or until done. Top with cheese.

    WOW! Thanks readers for all your input! I have weeks of ideas now.

    One thing… I am such a novice. Do I need to do anything to the chicken before I cook it? Can I just use it as is?

    Also- how do I know it is cooked thoroughly and safe to eat?

    I only use chicken breasts…………. If I am boiling chicken, I wash it off and trim all visible fat. Then, I cut it into chunks and put them in a pan of water and boil. As for how long? Not sure, maybe 20 minutes.

    You can make chicken cassarole, very simple cheap and easy recipe is to simply boil up your chicken and shred it once it is cooked and cool enough to touch then make a box of stuffing up, addd the chicken and one can of cream of chicken soup to the stuffing, mix and bake for 30 mins.

    Better late than never…the FAVORITE chix recipe over the years by friends and family..5 ingredients..
    Chicken Rose:
    1+ lb boneless chicken
    1 can cream of anything soup
    DRY stuffing mix
    slices of ham & cheese ( love cheddar or Monterey Jack)

    cover bottom of pan with layer soup
    lay chicken in
    cover with slice of ham, then cheese then spoon soup over top
    sprinkle dry stuffing ( even crackers work in a pinch!)
    bake at 350 for @ 30 min if thin chicken breast, or til 165 degrees by thermometer
