It’s been quite awhile since I’ve actually posted a menu plan. I’ve had a plan, and I’ve implemented that plan, but I have not posted it.
So, what are we eating this week?
Monday – General Tso’s Chicken Takeout-at-home, brown rice, edamame.
Tuesday – (Ground) Turkey burgers, oven fries, steamed corn.
Wednesday – Oatmeal, yogurt, fruit (this is church night, and we are gone from 5pm to 8pm).
Thursday – Baked Chicken, freezer mashed potatoes, steamed green beans.
Friday – I-will-be-gone-today-so-I-bet-my-sweetie-makes-everyone-peanut-butter-and-jelly-sandwiches 🙂
Saturday – Scrambled eggs, bacon, and biscuits.
Sunday – Uhhh… not sure yet 🙂 Again, church in the evening makes it hard to have a “family” meal.

I hope you like the General Tso’s! IF you need a do-ahead, try frying the chicken earlier (during nap maybe) and then just heating it slightly in the wok before you start the scallions. This will keep it crisp, and you won’t have to mess with frying it right at dinnertime.
