I have loved avocados for as long as I can remember. The versatile and healthy fruit goes well on so many foods, and is a fairly frugal way to add some healthy fats to your diet.

Avocado Breakfast Burrito

I love them on sandwiches, burgers or even with breakfast, but I especially love avocados with our frequent family Taco Nights! The folks at Avocados from Mexico want to know how you prefer to serve up taco night at your house. By submitting an original recipe in comments below, one lucky reader has a chance to win a $100 iCard to spend however they wish.

    I love it sliced in soups, on sandwiches, as a snack….I love avocados! I especially love guacamole! We slice and smash it, add onion, tomatoes, and garlic salt and eat with chips.

    Amazing Avocado Pudding! (I found this recipe on a blog and have twekaed it to our liking)

    8 medjool dates, pitted
    1/2 cup water
    3 medium avocados, pitted
    1 cup coconut milk
    2 TBS agave or brown sugar
    5 to 7 tablespoons cacao or cocoa powder
    2 teaspoons vanilla
    pinch sea salt

    Place the dates into your blender and cover with the 1/2 cup water. Pack the dates down if needed so they are covered, for the most part, in the water. Let soak for about 30 minutes.

    Then add in the remaining ingredients and blend until very smooth and creamy. Depending on your blender, you may need to add a little extra coconut milk or water.

    Pour into small bowls and serve as pudding or pour into popsicle molds and freeze for at least 6 hours.

    Strange, but SOO yummy and healthy! 🙂

    I will eat them any way I can get them. Guacamole, on a sandwich. I just made seafood enchiladas and put them in they were great.

    I love avocados. Something we always make is Black Bean Salsa…

    1 plum tomato
    1 avocado
    1/3 cup chopped red onion
    1 (15oz) can black beans, rinsed and drained
    1 1/2 tablespoons chopped fresh cilantro
    1 tablespoon olive oil
    2 tablespoons lemon juice
    1/8 teaspoon dried crushed red pepper (optional)
    1/8 teaspoon salt
    dash of garlic salt to taste

    -Dice tomato. Peel, seed, and dice avocado. Combine tomato, avocado, onion, beans, and cilantro in a bowl.
    -Whisk together oil and remaining ingredients. Toss with bean mixture. Cover and chill. Serve with chips.

    I have two fave ways to use Avocados- first as a last minute addition to turkey swiss omelets to add even more creaminess and flavor, and second in my favorite sandwich of all time, the Salad Sandwich.
    Take two pieces of lightly toasted whole grain bread. Spread with mayo, mustard, whatever you like best. Sprinkle spread bread slices with seasoned salt or seasoned salt substitute. Layer sliced avocado, sliced tomato, sliced cucumber and lettuce. Put together and enjoy all the best of summer in one sandwich! You can do a plainer veggie sandwich, but the avocado makes all the difference. It turns into a much more luxurious sandwich with the addition of avocado. Try it sometime, while home grown tomatoes are still in season, or use Roma tomatoes!

    I have never made a recipe with Avocado because I love to eat them plain with Yogurt. I also like them on a sandwich with sliced tomatoes.

    We love to make guacamole or use diced up Avocados in our soups. 2 Avocados diced, 1/2 onion, 1 diced tomatoe, handfull of chopped up cilantro, salt and pepper to taste, and a squirt of fresh lime juice. Mash it all up together and dip right in.

    My favorite way to use avocado is on a BLT. Sliced real thin.

    My 2nd favorite way is in a black bean and corn salad. I love the creamy, smooth chunks of avocado

    I mostly just mash it with a fork and add a little salt for my kids – they don’t like the spice of traditional guacamole, but they’ll eat it mostly plain!

    Avocado is a definite favorite in our house. It was my daughter’s first finger food, and we love it right out of the skin with a spook. My father in law makes a wonderful guacamole from scratch and I love it! Great giveaway!

    I LOVE avocados. My favorite recipe is romaine lettuce, pine nuts, grape tomatoes, herbed goat cheese, sliced avocados drizzled with balsamic vinaigrette dressing and served with grilled garlic Naan bread lightly brushed with olive oil….YUM!!

    My favorite taco recipe includes Mexican avocados.
    Season favorite meat with:
    chili powder
    garlic
    basil
    and chlis to taste.

    Then load taco shells with these ingredients and add lettuce, tomatoes and avocados. These avocados need to be mashed. Add:
    diced yellow onions
    garlic
    lime juice.

    I love avacadoes any way any time!! raw, on top of salads and sandwiches, with tomatoe and onion for a quick salad – give me an avacado and I’ll eat it!!

    my favorite way to eat avocado is with salt, lots of pepper and just a small squeeze of lemon juice and mash is up with a fork.

    1/4 C Salsa (chunky works best)
    1/8 tsp salt (or to your liking)

    Hey there,
    here’s my recipe!

    We do burrito night sometimes, and most nights to make it easy, we go vegetarian.
    It’s a “recipe” we made up in the early days of marriage:
    Black beans
    Corn
    Avacados From Mexico
    Salsa
    Sour Cream
    Cheese

    Super easy–the beans and corn were from cans and everything else we usually had on hand.
    This would go great in a taco shell, too, I’m sure!

    I love making homemade guacamole. Super easy: 4 ripe avocados mashed, chopped onion, chopped cilantro, chopped tomato, garlic, salt/pepper, and lemon juice. So easy and SO yummy with chips, in salad, on tacos, or even by itself.

    I make a simple salad: mix in chopped avocados, tomatoes, onions and cilantro. Add salt and pepper to taste. Drizzle some lemon juice on the top. Tastes like heaven. Thanks for the giveaway.

    I could eat Avocados everyday. I love them on sandwiches and with enchiladas, but my fave is guac: I mash up an avocado, stir in some chopped tom, onion, and garlic, and put mortons hot salt, with some lime. Sometimes I omit the onion and garlic and just use the powder of both.

    Guacamole

    1/2 cup finely chopped white onion, rinsed under cold water
    1 1/2 or 2 medium tomatoes, diced
    4 tablespoons chopped fresh cilantro
    3 teaspoons finely chopped jalapeno chile with seeds
    Fresh minced garlic to taste
    3/4 teaspoon salt
    3 ripe avocados from Mexico, pitted and peeled
    1 1/2 tablespoons fresh lime juice

    Mix first 6 ingredients in small bowl. In a large bowl, coarsely mash avocados with fork. Add onion mixture and lime juice. Stir until mixed.
    Serve with tortilla chips!

    I love making Guacamole. While leaving in Costa Rica, I learned to make it. It’s a simple recipie but very good!!

    Avocados
    fresh minced Garlic
    a little lemon juice
    and a pinch of salt.

    I love avocados anyway. On a salad, sandwhich, taco or burrito. They are just one of my favs.. Thanks for the giveawy

    We’re avocado purists in this household. We just mix an avocado with diced jalepenos and serve it with chips or on top burritos with salsa,avocado mixture, and sour cream.

    Ingredients
    • 2 medium ripe avocados
    • 1 tablespoon lemon juice
    • 1 tablespoon lime juice
    • 1 jalapeno, de-seeded and chopped
    • 1/4 cup jarred salsa
    • 1/8 teaspoon salt
    Directions
    1. Peel and chop avocados; place in a container along with jalapeno mixed in.
    2. Sprinkle with lemon and lime juice.
    3. Add salsa and salt; mash coarsely with a fork and top on tacos, nachos, or burritos!

    My favorite guacamole recipe is very simple:
    2 Tbs chopped fresh cilantro
    2 tsp salt
    2 tsp finely chopped yellow onions
    2 tsp minced jalapeno
    2 large ripe avocados, peeled and chopped
    2 tbsp finely chopped plum tomato (1 small tomato)
    2 tsp fresh squeezed lime juice
    Mash together 1 tablespoon of the cilantro, 1 teaspoon of the onion, 1 teaspoon of the chile, and 1/4 teaspoon of salt in the bottom of a medium-size bowl.
    Add the avocados and gently mash with a fork until chunky-smooth.
    Fold the remaining cilantro, onion, and chile into the mixture.
    Stir in the tomato and lime juice, adjust the seasonings to taste, and serve with a basket of warm tortilla chips.

    My favorite is so simple. I love to mash up the avocado’s and mix them with a bit of cilantro, lemon & lime squeezed and salt & pepper with cheese melted on top! I dip chips in the mix.

    easy avocado cheese dip

    3 avocados from mexico
    8 oz. cheese dip (jar)
    ½ cup sour cream
    ½ cup cilantro, finely chopped
    1 tsp. rosemary
    1 tbs. garlic powder
    ½ cup pimentos, diced
    1/3 cup water

    Mash avocados; add cheese dip, sour cream and garlic. Combine all other ingredients, thoroughly mix.
    Add 1/3-cup water to hold the green color.
    Salt & pepper to taste. Cover & refrigerate.

    I love Avocado/Black Bean dip!

    These Quesadillas have avacados and olives inside for a tasty crunchy and cheesy delight!

    10 (6 inch) corn tortillas
    2 cups shredded mozzarella cheese
    1 (2 ounce) can sliced black olives

    2 avocados – peeled, pitted and sliced
    2 teaspoons hot pepper sauce

    Directions:
    1. Heat a large frying pan or griddle over a medium heat. Place one tortilla flat on the frying pan. After 1 minute flip the tortilla over. Sprinkle a little more than 1/4 cup cheese on the tortilla, followed by some olives, avocado, and hot pepper sauce. Place another tortilla on top to make a sandwich. Cover the quesadilla with a lid. After one minute, flip the quesadilla. When the cheese has melted on the inside, remove the quesadilla. Repeat with remaining ingredients.

    2. Cut the quesadillas into triangles and serve.

    My favorite guac recipe is adapted from Alton Brown’s recipe. Everyone RAVES about it.

    Ingredients
    3 avocados, halved, seeded and peeled
    1 lime, zested and then juiced
    1/2 teaspoon kosher salt
    1/2 teaspoon ground cumin
    1/2 teaspoon cayenne
    1/2 medium red onion, diced
    2 Roma tomatoes, seeded and diced
    1 tablespoon chopped cilantro
    1 clove garlic, minced

    Directions
    In a large bowl place the scooped avocado pulp and lime juice and zest, toss to coat. Using a potato masher add the salt, cumin, and cayenne and mash to your desired consistency (I leave it a slightly chunky). Then, fold in the onions, tomatoes, cilantro, and garlic. Let sit at room temperature for 1 hour and then serve.

    We have Thursday as taco night. We are vegetarians, so we have shells, refiend beans, cheese, lettuce, tomatoes and they are topped with Avocado from Mexico of course.

    I love cheeseburgers stacked with with slices of avocado and tomato with season salt or with mild guacamole slathered on the bun.

    I LOVE avocados!! My fave recipe is here:

    Mushroom and Avocado Salad

    (it’s really good!! lol)

    12 Italian bread slices, grilled
    6 lettuce leaves (I use romaine!!)
    1 medium avocado
    1 lb white mushrooms
    12 oz red bell pepper, diced
    12 oz green bell pepper, diced
    1/2cup of sherry wine vinegar
    1/2cup of basil leaves, chopped
    1/4 cup of whole grain mustard
    1/8 cup of olive oil

    In a bowl, mix the mustard, vinegar, basil, bell peppers and olive oil, then set that aside

    Wash and slice the white mushrooms

    Add the mushrooms to the dressing and marinate for 15 minutes

    Place each salad portion on a lettuce leaf

    Slice the avocado and place it on top

    Serve with two slices of grilled Italian bread

    My recipe is soo easy!
    2 mexican avacados cut up
    2-3 cups grapefruit cut up
    4-5 tbs honey(haet it slightly to toss easier)
    dash salt fresh mint to taste

    just combine all ingredients,toss lightly to coat and..eat!
    I add cold grilled chicken in the summer to make a main dish.

    Here is my avocado salsa
    My recipe:
    1 avocado,
    1/4 c. red onions
    8 cherry tomatoes
    1 lime
    1/4 c. coriander

    Directions: chop avocado and squeeze lime over it. Chop red onions, tomatoes and coriander. Mix everything together.

    I have a sinfully delicious recipe which is incredibly easy to make. It’s a real showstopper!
    Ingredients:
    4 Avocados from Mexico
    1 can of corn
    1 can of spiced diced tomatoes (I use delmonte)
    1 can of goya beans (I use the red ones)
    1 package of mild guacamole mix

    Mash up the avocados, mix the other ingredients (drained) and serve with your favorite tortilla or blue corn chips

    I do vegetarian tacos
    Zatarans Black Beans and Rice Mix
    Avacados
    Tomato
    Red Pepper Flakes
    Mexican 3 Cheese Shredded Cheese
    Taco shells
    Just cook the black beans and rice as directed on the package and pile on the rest of the ingredients to taste. You can add in any other ingredients you prefer.
    The avacados and tomatoes are good for you, It’s easy, and vegetarians don’t have to miss out on all of the taco goodness. I make them when I make regular meat tacos for my family.

    Here’s my favorite recipe for Avocados from Mexico!

    Creamy Guacamole

    2 ripe Avocados from Mexico
    1/4 cup Cream cheese spread
    2 tblsp. Finely chopped onions
    1/4 cup Finely chopped tomatoes
    2 tblsp. Lime Juice
    1 Minced garlic clove
    1/8 teasp. Salt
    1 dash Black Pepper

    Mash the avocados in a medium-sized bowl, then add the remaining ingredients and mix well. Makes 12 2-tablespoon servings.

    My favorite recipe is quite simple. just take 2 avocados, add chopped onion, cilantro, tomatoes, a small amount of lime juice, and a bit of sea salt. If you like it spicy, you can add a sliver of habanero pepper (very hot) or jalapeño (mildly hot).

    I like guacamole topped with salsa and served with tostitos.
    Here is how I make my guacamole (I think I learned this from Betty Crocker Book) Mix 3 large avacados pitted and peeled, 2 tsp lemon juice, with 1/2 tsp hot sauce continue mixing until consistency is reached.
