A few weeks ago, I hosted an Introduction to Young Living Essential Oils class in my home. A few of my attendees, including my friend Alyssa {who was actually doing the class for me} are gluten-free, so I thought I would try my hand at making a gluten-free dessert. I found a recipe for Gluten-Free Fudgy Brownies, and amazingly enough, I had all of the ingredients on hand. As usual, I tweaked the recipe some, and added a fun ingredient – Peppermint Vitality Essential Oil!
I wanted my taste-testers’ approval, so we nixed the cinnamon and nuts, and added a bit more chocolate. After all… you can’t have too much chocolate!
Gluten-Free Peppermint Fudge Brownies
6 Tbsp butter, plus more for pan
⅓ c. cornstarch*
¼ c. unsweetened cocoa powder
½ tsp salt
12 ounces semisweet chocolate chips {we prefer these}
¾ c. sugar
1 tsp vanilla
1 drop Peppermint Vitality Essential Oil {OR 2 tsp Peppermint Extract}
3 large eggs**
Preheat oven to 350 degrees. Butter an 8-inch square baking pan and line with parchment paper, leaving an overhang on all sides.
In a large bowl, whisk together the cornstarch, cocoa, and salt. Cut the butter into chunks and place in a double boiler with the chocolate chips. Stir frequently until batter is melted and smooth. Carefully stir in sugar, vanilla, and Peppermint Vitality. Stir in the eggs, one at a time, until combined.
Pour liquid mixture into the cornstarch/cocoa powder and stir until smooth and combined.
Pour batter into the baking pan and smooth top. Bake for 35 minutes, or until a toothpick inserted in center comes out with a few moist crumbs attached. Be sure to rotate the pan halfway through baking. Let cool completely in pan on a wire rack. If you don’t, the brownies will fall apart. We know this because someone couldn’t wait to taste the brownies, and they fell apart. {Y’all… these smell incredible while baking. We could barely wait until they were completely baked! Ha!} Using paper overhang, lift cake out of pan, and cut into squares. These are ooey-gooey, so cut with care.
Yield: 16 brownies
*When measuring out the cornstarch, don’t just dip your cup into it; spoon the cornstarch into the cup and then carefully level. Do not pack it into the cup.
**Pull your eggs out of the refrigerator before preparing the rest of your ingredients. I have found that room temperature eggs mix in better than cold ones.
Enjoy with a tall glass of milk. These brownies are seriously decadent. Yum!
